Penne Alla Silvana

Servings: Serves 4

8 oz  Deboles Rice Penne
1/4 c  Spectrum Organics Walnut Oil
2  garlic cloves thinly sliced
1  10 oz box frozen chopped spinach, thawed
1 cup  heavy cream
4 Tbsp  unsalted butter, cut in small pieces
1/2 c  fresh basil leaf, cut julienne style
1/4 c  grated fresh parmesan
Hain Pure Foods Sea Salt and coarse black pepper to taste

Cook pasta according to package directions reserving ½ cup cooking water.

In large skillet, heat oil over medium high heat, add garlic and cook until golden about 3 mins. Add spinach and mix well, add heavy cream, simmer until sauce thickens slightly.

Add cooked pasta to the sauce and toss. If the sauce is too thick add a few tablespoons of reserved cooking water and cook for 1 more min. Add butter and cheese, stir to coat pasta evenly, season to taste, portion into bowls, top with basil and serve immediately.
