Cheesy Tomato Mushroom Chicken Casserole

Servings: 4

4  boneless chicken breasts
1 jar  Walnut Acres® Organic Portobello Marinara Pasta Sauce
2 cups  mushroom, sliced
8 oz  Swiss cheese, shredded
1/2 cup  butter
1/4 cup  chopped flat leaf parsley
1 box  DeBoles® Gluten Free Rice Spirals Plus Golden Flax Pasta
Hain Pure Foods® Sea Salt to taste
  1. Preheat oven 350°F.
  2. Place chicken in a 2 quart baking dish, pour tomato sauce over. Add sliced mushrooms and top with cheese. 
  3. Dot chicken with knobs of the butter and bake in oven for 35 minutes. 
  4. Remove from oven and sprinkle with chopped parsley.
  5. Cook pasta according to package instructions and drain.  Toss in a little butter and season with Hain Pure Foods® Sea Salt and a pinch of black pepper.
  6. Place 1 cup of cooked pasta into each of 4 warmed pasta bowls, divide cooked chicken casserole evenly between pasta bowls, serve immediately.
